I am a self-tuner and can easily install and test this myself. But, I don't hve a dyno. If you can provide a dyno for before/after results, I can tune and datalog the entire thing for the most info...

exactly. Almost 99.99% of the time any issues a car has is related to some mechanical issue, I.e. Vac leaks, exhaust leaks, botched fuel pump installs, popped egr hoses, etc.
After getting tuned...

I think you missed the point of the physical differences between the dynos. I wasn't really referring to the smoothing or computer related corrections, but u are correct...

^that is a good question. Each dyno has pros and cons. Roller style can simulate road going loads with tires, but also acts as a giant flywheel storing the rotational inertia of the rotating drums....

thats a good idea, I cannot really speak on the aftermarket ems of each shop but I'm almost certain that any of these tuners can tune anything you bring to them.
